VeggieLand

Michael and I tried out a vegan/vegetarian restaurant tonight and both agreed that we will most likely become regulars. Michael rated the food a 8/10, he is a tough judge though. His only complaint was that the restaurant smelled like fingernail polish. It actually did, just a little. I believe there is a nail salon next door. I really liked the restaurant as well. It was a complete hole in the wall, but the food was extremely fresh and tasty. It seemed to have a group of regulars because the one waitress knew everyone dinning there, and there were about 15 people in and out while we were there. So, give it a shot if you wish, it is located right off Peachtree Road on Pharr Road. Dine in or take out.

Here is what we ordered: peppermint tea, "chicken" noodle soup, stir fry veggies and tofu over brown rice with sliced almonds and cashews(me), "chicken" and veggies over brown rice(Michael), and old fashioned chocolate cake. The dessert was actually amazing. I could not tell it was vegan at all.

Sweet Potato Fries

So easy, so delicious and so healthy.

Preheat over to 400 degrees F. Peel, then cut sweet potatoes into thin wedges. Place potatoes on a baking sheet, then lightly sprinkle with olive oil. Toss the potato wedges so they are evenly coated with olive oil. Bake in oven at 400 degrees for 15-20 minutes, then toss again and bake for another 15-20 minutes. Add a touch of sea salt, let cool and serve. Yum.

Optional: add a bit of soy sauce and chili powder before baking.

Wade even likes them. Give them a try, but don't expect them to taste like french fries.

Just another day...

Today Wade had his 15 month check up. This doctor's visit was different than the previous visits because Wade remembered the office. He started screaming the moment we walked into one of the drab patient rooms. He was given three shots and by the time we left, he could hardly breath from crying so hard. Poor baby!

Wade is definitely a healthy boy though! Praise God! He is in the 95% for height and head circumference and 70% for weight. He has a big head just like his dad, Michael, who always says big heads mean big brains. Sounds good to me. I like big brains.

Also today, Toby, our across the street neighbor who is 5 days older than Wade, came over to play for a few hours while his mom was at work. Ten minutes after Toby's mom left I noticed that Wade had spit up a little on himself. I picked him up to wipe his face. As we were walking into the kitchen, Wade threw up all over himself and me. Not just a little throw up, but a lot! Toby just stood there and stared at us while I accessed the situation. Thank goodness Uncle Chip was at our house and was able to watch Toby while I gave Wade a bath. I patiently waited, covered in BLAH for Chip to finish his phone call before throwing Toby on him. Chip and Toby made friends quickly.

Business Cards...hopefully means business :)

Just designed business cards for Keller Design Studio, my web and print design business that is now in business! Website will be available in the next few days.

Rewind to the Holidays

We had so much fun this Christmas! Michael was able to take off almost 2 weeks of work, which absolutely made my Christmas. Our break started out by going to St. Philips in Atlanta for the Christmas Eve Pageant. Wade loved watching all the big kids perform in the pageant...for a while at least. He is quickly learning sign language and just mastered the "all done" sign. This sign is communicated by holding both hands in the air and shaking them back and forth. About 30 minutes into the service, he was "all done" with church. Maybe I should not have taught him this sign, he is always "all done" with everything, including changing his diaper, washing his hair and riding in the car. Ha!

We spent Christmas Eve and day with Michael's family and it was wonderful! The day after Christmas we took a 5 day trip to Birmingham to celebrate Christmas and spend time with my family. We came back to Atlanta for New Years Eve to go to the Peachbowl and watch LSU smother GT. Not a good game for us GT grads. New Years day we packed the car once again and headed to Cashiers, our favorite place! Thank you friends and family for making our Christmas so special. We are so thankful for you and love you lots!

It's a new year...again!

I really can not believe that it is January again. Time for fresh start. New resolutions and goals, and an exciting year ahead. I decided it is time to join the blogging bandwagon and to share a little bit about our lives. This blog's topics will primarily focus on the family and will also include some of my completed web and print designs. I hope you enjoy!

A few resolutions for 2009 that I would like to share:
  • Spiritual Growth - Find a young couples sunday school class to join and spend time in the word daily. Amen.
  • Personal Growth - Be the best wife and mother that I can.
  • Health - Michael and I have been reading about veganism and want to see if the never ending list of health benefits are true. We will be practicing a vegan diet for one month. Could be interesting.
  • Career - Launch a freelance web design business, Keller Design Studio. Website TBA as soon as final updates are made...be on the lookout!
